Hailing from the ramen capital, Hakata (Fukuoka City) in Kyushu, Japan, IPPUDO opened on 16 October 1985, and has since become the most popular ramen restaurant in Japan.
Its founder, Shigemi Kawahara, was crowned Ramen King (2005) and holds the honor in the Ramen Hall of Fame after winning the championship three times in a row between 1995 and 1998, on “TV Champion Ramen Chef”, a reputable show produced by TV Tokyo.
IPPUDO’s Tonkotsu ramen broth is created from an elaborate cooking process that uses different cuts of pork bones, giving it a rich and creamy flavour tailored to customers’ tastes all over the world. The noodles are offered in different thickness in accordance with traditional Hakata cooking, while IPPUDO’s secret recipe gives them a unique crunchy and springy texture and innovative flavor.
IPPUDO’s naming of Aka (Red) and Shiro (White) for the two types of broth has become industry standards and been adopted by many other renowned ramen restaurants. From its humble beginnings in 1985, IPPUDO now has over 70 restaurants throughout Japan, including locations in Kyushu, Osaka and Tokyo, and overseas in New York, Singapore, South Korea, Taiwan and Hong Kong.
IPPUDO regularly sees hour-long queues of those eager for a taste of the renowned IPPUDO Ramen, and amongst them you often see the faces of many international celebrities such as SMAP, Harrison Ford, Jessica Alba, Anna Hathaway, Rain and Jacky Chan.
