In the restaurant, customers can watch chefs making raw shengjian, or pan-fried dumplings filled with minced pork, and then frying them to perfection.
Yaba Shengjian does the crisp bottom to perfection. It is neither overdone nor too soft. It has the taste of thin toast with a slight crackle upon biting it. The sound adds to the pleasure of eating the dumpling.
